Opal apples may just be my favorite apple to eat.  I like their vibrant yellow hue, but their taste is where it’s at. They have a sweet, honey like taste with floral notes and hints of pear and banana; the crunch is dense with a juicy texture. 

They are naturally resistant to browning; sliced Opals stay fresh and white for hours, However, this premium quality comes at a price: they are a proprietary variety grown exclusively by licensed orchards (primarily in Washington state). This leads to limited availability, typically from November to March (sometimes extending to June). As a result, they are often pricier compared to standard red apples.
